Garlic Parmesan Pasta With Spicy Shrimp

I am HUGE fan of pasta! I can't think of a pasta dish I don't like. Oh and don't get me started on cheese, garlic and shrimp. More of my favorites! So it's easy to see that this dish is a winner. 

The dish comes together easily. Perfect for a easy weeknight meal or even date night! You'll have yummy creamy pasta and delicious shrimp on the table in a flash! 


Here's what you'll need for 4 servings:

2 tsp plus 1 tbsp olive oil 
4 cloves of garlic, minced
2 tbsp butter
1/4 tsp salt
1/2 tsp black pepper
4 cups chicken stock
1/2 lb angel hair pasta
1 cup grated Parmesan cheese
3/4 cup heavy cream
2 tbsp parsley 
1 lb medium sized shrimp
1/2 tsp garlic salt
1/2 tsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp black pepper 


Heat oven to 450 

Season shrimp w last 4 seasonings. Drizzle w tbsp of olive oil, stir and set aside. 

In a large pot, heat the remaining olive oil on med/low heat. Add the garlic and stir for 1-2 minutes. DO NOT let it burn. Mix in butter until melted. Add salt, pepper and chicken stock. Turn the heat up to high and let it come to a boil.

Once it's boiling, add pasta and cook following directions on package.  

While pasta is cooking, transfer shrimp to a baking sheet and place in oven for 10 minutes. 

Reduce to medium heat and mix in the Parmesan cheese until completely melted and combined. Turn off heat and stir in the cream and parsley. 

Top with shrimp and serve.

Parmesan Chicken Bites With Cheesy Garlic Sauce


As summer break comes to an end and school and my new job (yessss!) starts on Monday, I have been looking for new quick and easy recipes that can be on the table in 30 min or less. Annnnd I've found a new favorite!!!! This dish is really yummy and picky eater approved! It's everything kids love.. crunchy, cheesy and easy to eat. 

I didn't plan on posting this dish (hence the lack of photos) but my kiddos enjoyed it so much that I decided to share it anyway. 

Here's what you'll need for 4 servings: 

•1 lb pack of chicken tenders 
•1 cup flour
•2 eggs, beaten
•2 cups of Panko breadcrumbs
•3/4 cup grated Parmesan cheese
•1/2 tsp black pepper and garlic powder
•1 tsp seasoning salt and garlic salt 
•2 oz cream cheese
•1/4 cup milk
•1 tsp oil
•2 oz shredded Colby-Jack cheese or cheese of your choice
•oil for frying 


Cut each of the chicken tenders into 2 pieces. Season with seasoning salt and set aside. 
In a blender or food processor, pulse the Panko and Parmesan cheese until its a fine crumb mixture. 
Put the flour, egg, and crumb mixture into separate shallow dishes. 
Stir the pepper and garlic powder into the crumb mixture. 
Dust each piece of chicken with the flour then dip in egg, and roll in the crumb mixture. Coat all pieces before you start frying. 
Pour enough oil in a large skillet to cover one side of the chicken. Heat over med heat. Add the chicken in batches and fry until golden brown on each side. About 3-4 minutes. Make sure to fry long enough to cook each piece all the way through.  Remove and drain on paper towels. 
For the cheese sauce, melt the cream cheese in the microwave for 30 seconds. Whisk in the milk, garlic salt and oil until smooth. When smooth, add cheese and microwave for another 30 seconds. Whisk again until smooth, adding more milk if necessary. 
Spoon sauce over chicken or serve on the side as a dipping sauce. 
Serve immediately.

Smothered Chicken

Sorry my loves! I have been mia since my last post but I'm back!

Today I have for you one of my favorite chicken dishes, Smothered Chicken. It has some of my favorite things. Cheese, bacon and mushrooms!! If you have tried the Alice Springs Chicken at Outback Steakhouse then you will love this dish. 




Here's what you'll need for 4 servings: 

•4 boneless chicken breasts (I prefer thin breasts, cuts down on the cooking time) 
8 bacon slices 
•1/4 cup regular mustard
•1/3 cup honey 
•2 tbsp mayo 
•2 tsp dried onion flakes 
•1 cup fresh sliced mushrooms
•2 cups shredded Colby Jack cheese
•seasoning salt and garlic powder 

Season the chicken with the seasoning salt and garlic powder. I eyeball it so use as much/less as you would like. Cover and refrigerate for 30 minutes.


While the chicken is in the fridge, cook bacon in a large skillet until crisp. Remove and set aside. 


Sauté chicken in the bacon grease for 3 min per side or until browned. It will finish cooking in the oven. Place in a 9x13 baking dish. Crumble the bacon while the chicken is cooking. 


In a small bowl, mix the mustard, honey, mayo and dried onion flakes. 


Spread some of the honey mustard over each piece of chicken, then mushrooms, bacon and cheese. 


Bake at 350 for 15 min for thin breasts, 30 for thicker breasts or until cheese is melted and chicken is done. 


I served mashed potatoes and sautéed spinach as my sides tonight.

Sunday Dinner: Cheese Tortellini Soup


Yes yes I know it's summer but I've been wanting soup lately. Plus it's cloudy and doesn't look that hot outside (90 degrees.. who am I fooling) so soup it is! 

This is a really simple dish because it involves.... A crockpot! Who doesn't love crockpot meals!? Put everything in and leave it! Awesome! 

Ok so here we go.. 

You'll need 
          1 bag of frozen cheese tortellini
          1 small bag of fresh spinach
          2 cans of Italian style diced                tomatoes             
          4 cups of chicken broth (1 box)
          1 block of cream cheese, cut up
          1 lb of Italian sausage, browned and drained
Serves 6-8 


Put everything in crockpot except spinach. It will turn a not so pleasing color if cooked too long.
Stir and cook on low 5-6 hours, adding the spinach in the last 30 min. 
*** I added a few shakes of this yummy seasoning as well***

5 hours later.... A nice creamy, chunky soup! 

Now all you need is a nice crusty bread. I love the Bake at Home breads from Walmart. Amazing bread in 10 min!
